My family is kind of picky when it comes to soups. There aren’t many that we like. However, when the weather gets cooler, nothing sounds better than a warm bowl of my favorite comfort food soups. I’ve been making them more often lately and pairing them with really good grilled cheese sandwiches or ham and cheese sliders so that the people who aren’t crazy about soup will have something to fill up on.

Because it’s been perfect soup weather in my part of the country lately, I thought I’d share my favorite soup recipes with you.

Chili

Chili is the most frequently served soup at our house. Megan is the only one who won’t eat it at all, so I usually make hot dogs to go with it. Brianna uses it to make a taco salad. The rest of us just enjoy the chili.

1 lb ground beef
1/2 onion, chopped
1 clove garlic
1 T flour
2 T chili powder
1 T taco seasoning
1 t salt
1/2 t ground cumin
1/2 t sugar
1 can diced tomatoes
1 sm can tomato paste
1 can tomato sauce
1 can pinto beans

Brown ground beef with onions and garlic. While beef is browning, mix together seasonings until well-blended. Drain ground beef and add tomatoes, tomato paste, tomato sauce, and pinto beans. Add seasoning and mix until well-blended. Add water to reach desired consistency and simmer for 30 minutes, stirring occasionally.

Broccoli Cheddar

EverybodyCheddarbroccoli cheddar soup. I made it a couple of weeks ago to take to my sister’s and my cousin brought ham and cheese sliders. That soup-and-sandwich pairing ranks right up there with tomato soup and grilled cheese. One word: yum! I love this Panera Bread broccoli cheese soup copycat recipe.

Chicken Gnocchi

Just this weekend, I attempted this Olive Garden chicken gnocchi copycat recipe. It was really good. It’s a favorite of mine and Josh’s.

Tomato Basil

Apparently, I’m all about the copycat recipes, because I love this one for Applebee’s tomato basil soup. Even the picky girls don’t complain about the tomato basil when there’s a really yummy grilled cheese to dip in it.

Here’s how I make my grilled cheese:

1 loaf sliced French or Italian bread
Sharp cheddar slices
Shredded Parmesan, Romano, Asiago blend
Butter

You can probably figure out what to do with it all. It’s the three-cheese blend that makes it, though.

Chicken taco soup

I love, love, love chicken taco soup, but most recipes are too spicy for me. So, when a friend shared this milder recipe, it quickly became my favorite. It gets bonus points for being healthy.

1 rotisserie chicken (or you can do it the hard way and boil a pound of chicken thighs), diced
1 c chopped onion
1 16oz can pinto beans
1 15oz black beans, drained and rinsed
1 c frozen, whole kernel corn
1 8oz can tomato sauce
2 c chicken broth
1 14.5oz can Rotel tomatoes (mild)
1 14.5oz can diced tomatoes (skip this and use 2 cans of Rotel if you like it spicy)
1 packet taco seasoning mix
1 packet Hidden Valley ranch dressing mix

Mix all ingredients together in slow cooker. Cook on low for 8 hours. Top with shredded cheese and sour cream. Serve with tortilla chips, if desired.

Clam chowder

I haven’t had this one in a really long time, but it’s my favorite clam chowder recipe. The red wine vinegar is very important.

Beef stew

I don’t really have a recipe for this one, but I love to make it with leftover roast when I’ve cooked the roast with potatoes and carrots. I toss in green beans, corn, diced tomatoes, tomato sauce, and tomato paste. Yum. It is excellent served with corn muffins.

Loaded potato

The loaded potato soup is probably my very most favorite soup. It freezes well, too.

Veggie Soup

I don’t have a recipe for my veggie soup either. Basically, I do it the same way I do the beef stew, but without the beef and with some chicken broth.

Soup #10

Okay, so I cheated a little. I don’t really have 10 favorite soup recipes. It’s the whole “my family isn’t crazy about soup” thing. So, I was hoping you could help me with #10. Do you have a favorite soup that I haven’t listed here? Would you mind sharing the recipe? I’ve been thinking of trying a black bean soup, so if you’ve got a recipe for that, I’d love to have it, but any favorite soup will do.

Edited to add: I have perfected a black bean soup recipe which rounds out my Top 10 Favorite Soups.
