French toast muffins are a cross between traditional French toast and muffins. These healthy little bites of heaven are the ultimate morning treat, with Sunday morning breakfast vibes in a grab-and-go form perfect for weekday mornings. Plus, we throw in some fruit for good measure!

So basically here's what we're looking at today: vegan French toast, made into muffins, flavored with apple and cinnamon, topped with maple syrup. I mean…how dreamy does that sound!?

  • Maple syrup – Be sure to use real maple syrup, not pancake syrup!
  • Cinnamon – Ground cinnamon adds ALL the cozy flavor, but apple pie spice would also be fab.
  • Apples – I like an apple with a nice sweet-tart balance, like Honeycrisp.

How to Make French Toast Muffins

  • Prepare the bread. Cut the bread into cubes and add them to a mixing bowl.
  • Make the vegan custard. Beat together the milk, eggs, syrup, and cinnamon.
  • Assemble. Pour the custard over the bread cubes, then fold in the apples. Divide the French toast muffin mixture into 12 cups in a muffin pan.
  • Bake. Place the pan in the oven and bake at 350ºF for 35 minutes, or until baked through. Serve with maple syrup.
